Culinary Services - Executive Chef

Details: The Executive Chef is responsible for large quantity production of quality foods for the patients, visitors, staff, employees, and students of the Clinical Science Center. The position is also responsible for the supervision of catering, purchasing, the Room Service Call Center, assembly and delivery of patient trays, and kitchen sanitation which includes the central ware washing operations. The Executive Chef is responsible for three of the four elements of the Press Ganey patient satisfaction score. He/She is also responsible for the quality of food products sold in our Retail, Catering and Vending operations. Approximately 800,000 retail meals and 700,000 patient meals are produced per year. The Food Production center operates 24 hours per day Monday-Friday. The Room Service System is available 7 day per week from 6:30am-9:30pm. The position is responsible for the development and implementation of a salary and supply budget of approximately six million dollars. The Executive Chef controls and directs the activities of 100 plus employees through four supervisors. Food Production operation has a high degree of complexity due to wide range of services provided for patients and retail customers and the problems associated with providing high quality consistent service, supervision of entry level as well as trained and experienced employees; and provision and delivery of safe, quality, timely, appetizing meals to patients and retail customers. Problems encountered are of a moderate to high level of difficulty and can usually be solved by referring to successful past practice. Creativity and innovation is a key element in the decision making of this position because most problems involve an unexpected change, from general routine, with an immediate response. One must be able to react independently and rapidly, with the knowledge that all decisions made are in the best interest of the customer. The position requires the ability to independently plan and control production and Room Service tasks, to respond to customer needs. A consultative role to staff is required, in addition, including marketing strategies. Ongoing and constant interaction is required with other food service managers, supervisors, and workers to meet varying demands and problem solving situations. Ability to interact with employees at all levels required. External contacts involve patients and customers, other hospital employees, vendors, and community contacts. The position utilizes extensive computerized data base with recipes, food items, production history, forecast, food costs, and trends. Effective control of food and supply costs, over and under food production, utilization of labor hours during peaks and valleys in workload is required. The Executive Chef conducts interviews, performance appraisals and orientation for employees within the area and serves as a preceptor of undergraduate and graduate dietetic students during food production rotation. Works under deadline pressures and moderate stress conditions. Requires working in a kitchen environment, exposure to moderate noise levels, heat and cold variations, working with and around kitchen equipment and wet floors.
