Serves 6
½ cup pineapple juice
2 Tbsp. brown sugar
1 Tbsp. minced fresh ginger or 1 tsp. dry minced ginger
3 Tbsp. soy sauce
1 clove garlic, minced
6 salmon fillets (4-5 oz. each)
Preheat oven to 350 degrees. Create a marinade* by combining the first 5 ingredients in a bowl and mixing well until sugar is dissolved. Place salmon fillets in a shallow dish with a lid. Cover fish with marinade and place in the refrigerator for about 10 minutes before cooking. Place salmon fillets in a baking pan coated with cooking spray and bake for 15 minutes or until the fish flakes easily with a fork.
